cooking

Notes

Cooking oil – sunflower

Neutral food
Vegetable – kailan, xiao pai chai, chai xin, ku chai, French beans, brocolli
Fish – white fish
Meat – chicken

Protein and carbohydrate – do not fry

Garlic – smashed and cut, heat together with oil

Eat rice together with soup

Beverage
Coffee – add sugar
Tea – plain
Do not add milk to any of the above

Take:
Breakfast – sweetness
Lunch – saltiness
Tea break (if any) – sweetness
Dinner – saltiness

By 9pm, skin pores start to close. Advisable do not take bath 9pm onwards. Also no cooling food, no heavy meal post 9pm. No fruit after 7pm. If body has sickness, do not take fruit post 4pm.

Soup 1

3 liters of water in stainless steel or silver pot
2 carrots (5 to 6 inches long) – remove skin and cut diagonal ~2inches
2 big onions – remove skin and cut into halves
3 big ripen tomatoes – crush in pot
2 pieces chicken thigh – remove skin. Slice as shown in demo class
2-3 chicken cubes (Knorr brand)
2 sugar cubes

Method:
1. Place the above ingredients into pot to boil.
2. When water boils, cover pot and turn heat to low.
3. Let it boil 45 mins.
4. After 45 mins boiling done, let the soup stand untouched for further 15 mins.
Serve the soup warm.

* Keep leftover soup in fridge to preserve quality
* Leftover soup must be warm on medium heat before serving. Do NOT boil again ready made soup.
* Soup1 can be used in other cooking.


Soup 2

2 litres of water
1 Chinese radish - peel skin (twice) and cut diagonal 3cm thick
1 pork throttle or few chicken thigh bones
30 pieces of chinese red dates - cleanse and press or break open in the middle
1 chicken knorr cube

Method:
1. Same cooking method as in Soup 1 if using chicken thigh bones.
2. If using pork throttle, boil for 1 hour. And let pot untouched for further 15 mins same as in Soup 1.



French Beans

French beans – washed and remove the tips, preferably air-dried before frying
Sunflower cooking oil
Oyster sauce
Garlic

Method:
1. Pour oil into frying pan and let it boil.
2. When oil reach boiling point, place in French beans. Let it fry about 5 mins. The skin texture will shrink.
3. Remove beans to drain the oil. Allow beans to cool. Remaining oil can be use for further cooking.
4. Crush garlic and place into frying pan with a bit of oil. Turn on heat.
5. When garlic turns slightly brown, switch off heat and put in French beans. Add oyster sauce and stir.


Method to Preparing Vegetable ; Broccoli

Broccoli – washed and cut small
Pot with sufficient water to blanch broccoli
Cool water
Garlic – crushed and cut
Sunflower cooking oil
Oyster sauce

Method:
1. Bring pot with water to boil.
2. At boiling point, add broccoli to boil for 3~5 mins.
3. Remove broccoli with strainer and pour cool water over broccoli to cool it down.
4. On a frying pan, place garlic and oil. Turn on heat.
5. When garlic turns slightly brown, switch off heat and put in broccoli. Add oyster sauce and stir.


Method to Steam Fish

Fish – remove head and internal organs, scales. Slice diagonal on one side of the fish
Mushroom – slice
Medium size tomatoes – cut quarter
A cup of Soup 1
A bit of chicken cube and sugar
Aluminium foil – sufficient to wrap fish

Method:
1. Dilute chicken cube and sugar with soup.
2. Place fish in aluminium foil and add all the above ingredients and soup.
3. Wrap fish and the ingredients tight.
4. Steam for 20 mins.




Stir-fry Chicken with Garlic

Chicken thigh meat – cut into small portion
Garlic
Sunflower cooking oil
A cup of Soup 1

Method:
Put meat and oil into frying pan. Turn on heat.
When meat starting to turn whitish, about 30-50% cooked, put in garlic and stir.
When meat is about 60-70% cooked, add in Soup 1. Cover pan and cook for about 5 mins.
